What about a riverboat cruise down the Mississippi River, R Family? Perhaps starting/ending in New Orleans? This could be a lot of fun for those with kids (and, I imagine, anyone else!)

I would LOVE to do this.... I think something from St. Louis to New Orleans would be a lot of fun! Or even MN to New Orleans!

We would go, I did that as a kid with my birth family. A great time had by us all. I know my whole family would love it

I know that there are riverboats docked in Iowa that are essentially floating casinos. I'm sure that there are others along the way.
